Raw mango sweet pickle
.  Ingredients: "

. Raw Mango_ Raw mango - 01 kg, ground sugar_ Fine sugar - 01 kg, • Vinegar_ Vinegar - 1/4 cup, • Raisins (Raisins - 50 grams, date dates_ Dry dates - 6-7 (finely chopped),  Fennel_Fennel - 25 grams (Fried PC), Black pepper - Black Gram - 25 grams (Fried PC), Cumin seeds - 25 grams (Fried powder), • Chironji - Chironji - 02 teaspoons, •  Red Chilli Powder_ Chilli powder - 01 Tbsp, Saffron Color_ Orange color - 01 pinch Black Salt_ Black salt - 01 tsp, • Salt_Salt - As per taste. 

Method: 

"• For sour sweet pickles, wash and peel the mangoes first and then grate them. Then sprinkle the mango pulp with a tablespoon of salt and mix it well and keep it for 2 hours. •  After 2 hours, mix the ground sugar and grated mango in a pan and cook on medium flame on the gas. When the sugar melts and becomes molasses, add fennel, cumin, black pepper powder and chopped date dates and keep stirring occasionally.  • After the mixture thickens, add raisins, chironji and cook for 2 minutes. After that add chilli powder, black salt and cook for 2 minutes. After that, turn off the lid and turn off the gas.
