Sabudana Khichdi
Ingredients:
• Sago - 150 grams of oil or ghee - 1. 5 tablespoons
• Cumin seeds - half a teaspoon Asafoetida - 1 pinch (if you want) Green chillies - 2 (finely chopped)
• Peanut - 1 table spoon • Cheese - 70 grams (if you want)
• Potatoes - 1 medium Shaped.
• Ginger - 1 inch piece (grated) salt - as per taste
• Grated coconut - 1 tbsp (if you like) green coriander - 1 tbsp (finely chopped)
Method:
• Wash the sago, soak it in water for 1 hour. Remove the excess water after getting wet. If you are using large sago, soak it for about 8 hours instead of soaking it for 1 hour.
• Peel the potatoes and slow them down and cut them into small cubes. Cut the paneer into even smaller cubes.
• Put ghee in a heavy bottom pan and heat it. Put potato cubes in hot ghee and fry them till they turn light brown and keep them in a plate. After frying the potato cubes, add cottage cheese cubes and fry them lightly and keep them in the same plate.
• Make the peanuts coarsely crushed and do not beat them.
• Add cumin and asafoetida to the remaining hot ghee. After roasting cumin seeds, add green chillies and ginger, and stir the spices with a spoon, add peanut powder to this spice and fry it for one minute. Now add sago, salt and pepper and fry it well with a spoon of 2 minutes. Add 2 tablespoons of water and cook on a slow gas for 7 - 8 minutes.
• Open the lid and see that the sago has become soft. If you have not, and you feel that sago needs more water to cook now, then add 1 or 2 tablespoons of water and let it cook for 4-5 minutes on low flame. Mix cubes of potato and cottage cheese. Remove the pan from the gas by stirring and take out the khichdi khichdi in a bowl or plate. Garnish with green coriander coconut top.
• Your sago khichdi (Sabudana khichdi) is ready. Serve it hot
