Ingredients:
• Full cream milk - 1 liter
cardamom - 4
curd - 3 - 4 tbsp
sugar - 100 grams (% cup)
Method:
Put the milk in the pot and heat it to a boil on high heat, when it starts boiling, then slow down the flame and keep the milk boiling till it is halved, stirring well (the milk must run well. It is so that it does not stick to the bottom of the pot.
• Boil the milk until it becomes thick and half, turn off the gas. Add half the sugar and cardamom powder. Mix the remaining sugar. Caramel the sugar Put the sugar in a heavy bottom vessel to medium flame and keep the sugar stirring continuously with a spoon.
• Sugar will start melting in a while. Keep stirring the sugar continuously. When the sugar melts well, it becomes caramelized Add it to the milk and mix it well.
To set the milk mixed with sugar, take an earthen ax and add milk to it. Milk should not be too hot nor too cold, milk should be medium hot. • Add two spoons of curd to a Kulhan filled with milk, cover it and keep it in a warm place to freeze (any other utensil can also be taken to set the Mishti doi). • Milk takes 10 to 12 hours to freeze. Mishti doi is ready when the milk freezes. Serve and eat cold delicious mishti doi.
